I know aubergine aka eggplant 'facon bacon ' is so popular at the moment, and I have been making it at home for a while, like this in the oven or in the dehydrator. However this time round, I decided to give the under-rated vegetable - the marrow - the same smoky treatment.  Ma rrow is also known as Summer Squash in some parts of the world and this was the result.   Smoky, golden metallic coloured crisps.   D was not overly fussed by them.  I liked them.  My vegan friend at work, loved them, my omnivore colleagues snugged their noses at it - make them yourself and decide for yourself what you think of them.   These Marrow Crisps are best eaten on the day as they become pliable a day or two later.  But I know in reality there is no way you would be able to eaten it on the day, so to continue enjoying them and appreciating its chewiness you can still treat and eat it like a vegan Marrow Jerky or Marrow Biltong.   I am describing the...

Healthy Vegan - From Weed to Dinner Plate: Eating Dandelion Leaves

The weather was fantastic over the weekend and like many people with gardens or allotment plots, I was out working in mine.  Between the two of us, we got loads done including a lot of weeding including dandelions . The potatoes have gone in.  I have sowed many seeds.  The seeds I sowed two weeks ago have germinated, tomatoes, courgettes, chard, broad beans and some have not.  I will up-date my Sowing The Seeds page to let you know what I am attempting to grow this year, bu t today, I am sharing my dinner plate of v egan meatballs on a bed of wilted dandelion leaves.  I was inspired by a recipe for Fried Dandelion Greens with Lemon and Garlic Potatoes I saw in Street Vegan by Adam Sobel .  My food presentation is not good, a little corny I think but the finished dish was delicious.  The meatballs were zinging and the spicy herby coating infuse the crispy brown exterior of the veggie meatballs.  The sauteed dandelion greens were not at all bi...

Healthy Vegan - Chocolate Brownie's Sister: Meet Blondie - White Chocolate and Cranberries

Its been a while since I've made a sweet cakey bake with lots of butter and chocolate, white chocolate to be more specific.   At one point, I couldn't remember whether I had made a  White Chocolate Blondie before, but I had  ad found it ridiculously sweet then.  I have to be in the mood for really really sweet things and this was bordering.   I took some Blondies into work and offered them to colleagues.  Some were bewildered at the existence of a white chocolate equivalent of the Dark Chocolate Brownie.  Of course they were amused.   Sadly, a few of them were not keen on the content of the dried fruit and declined my generous offer, but if you want to dive into some of these sweet bites, you can find the recipe below.  I am sharing this with Alphabakes  hosted by Caroline Makes and The More Than Occasional Baker.  The letter this month is W for White Chocolate; and We Should Cocoa devised by Tin and Thyme and hosted this ...
